The fruit carries through as fresh peach and white plum, beneath lies a mineral spine (wet stone, oystershell) that gives structure and precision.

Serve at ~10–12 °C. Ideal with pan‑seared scallops, lobster in a light butter sauce, roasted chicken with herbs, or refined soft‑cheeses.
