De druiven voor deze wijn komen van onze wijngaard in het dorp Shishmanovo. Alle variteiten werden op verschillende tijdstippen geoogst

De wijnstokken Langs de glooiende heuvels van het Sakar-gebergte, niet ver van Harmanli, op een hoogte van 130 meter, op kaneel- en grijze bosgrond, verbouwen we onze Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud en Rubin druiven. De druiven voor deze wijn komen van onze wijngaard in het dorp Shishmanovo. Alle variëteiten werden op verschillende tijdstippen geoogst en apart gevinifieerd. De druiven, voorgekoeld gedurende minstens één dag en nacht, werden uitgelekt en geperst in een mandpers. De behandeling en het persen werden afgestemd op de kenmerken van elke variëteit. We hebben ons maximaal ingespannen om de druiven en de most te beschermen tegen oxidatie door droogijs te gebruiken tijdens de verwerking. Na de klaring gist het sap bij een temperatuur van ongeveer 14 °C. De resulterende wijnen werden gemengd na de voltooiing van de alcoholische gisting.
