Wijn en gerecht : Ossestaart, Wagyu, Risotto all' Amarone, (zeer) oude kazen. Combineer met een hartige stoofpot van rundvlees, wild, geroosterde eend.

De wijn : San Cassiano Amarone della Valpolicella is gewoonweg verbluffend en onderscheiden met het hoogste kwaliteitslabel in Italie (DOCG).

 In de neus zijn geuren van rozijnen, pruimen, pruimen, een beetje pure chocolade, een vleugje leer en de fijnste toets van eikenhouten vaten. In de mond heeft de wijn net genoeg tannines om zelfs de meest kritische Amarone-fans tevreden te stellen. Dit is een volle wijn met een frisse en elegante textuur en afdronk. 

In de wijngaard staan 5000  wijnstokken per hectare (Guyot-systeem).

De bijzondere bodem is samengesteld met wit marmer.

De totale productie van het domein bedraagt 14000 flessen Amarone.
