2019 SHIRAZ CABERNET SAUVIGNON
Taking its name from the Stock Route which ran along the higher ridges
of Terra Rossa soil between Coonawarra and Wrattonbully, this blend is
made in the traditional Australian style.
Wrattonbully’s terra rossa soil over limestone produces juicy, spicy Shiraz,
whilst Coonawarra’s soil and climate produces classic Cabernet Sauvignon
flavours of mixed berries with an abundance of fine tannins. The combination results in a complementary balance of full fruit flavours.
A cool and dry April was perfect for ripening, allowing full flavour
development and optimal sugar levels. Shiraz and Cabernet Sauvignon are
both highly rated by Coonawarra winemakers. Shiraz is showing bright
fruits with high colour intensity. Cabernet is deep and rich in colour with
great varietal definition and soft ripe tannins.
Careful handling in the winery ensured that the vibrant flavours seen in the
vineyard are evident in the resultant wine. 18 months in a mix of French and
American oak barrels of varying age, has added complexity and texture whilst also allowing a softening of the tannin structure.
