This coffee reminds of: blue berry, citrus, brown sugar, and spices.

Yellow Bourbon Natural by Oscar Restrepo is a sweet, smooth coffee that showcases the skill of its producer and the richness of its land. This coffee is a delightful collection of vibrant aromas and natural sweetness.

The coffee cherries are collected and then rested in sacks for 12 hours. After this, the cherries are floated in water to select only the good ones. This part of the process also helps to stabilize the temperature of the cherries, homogenizing them before drying on drying beds for 20 to 25 days, depending on the weather.

The seed with parchment (“pergamino”) is placed in hermetic bags for 30 days to stabilize. This is to rest and stop the drying process. This last step allows for flavors to come up and show better after roasting.

Is give it a 7 out of 10 for quality because of the shedding and the top and underneath pieces are only secured on the edges, which makes it move around and I have to grab the edges and shake to get its form back to normal. I would definitely purchase again. Especially if the shedding reduces it goes away after I run it through a wash cycle. I do NOT recommend drying in the dryer. It will mat I can almost guarantee that. Almost all blankets like these do if you dry them in a dryer with heat. Maybe no heat tumble might work, but NO heat.
