Star Apple with Big, Smooth Skinned Fruit & Creamy Vanilla Custard Pulp

Hipolito Star Apple is a lush tropical fruit tree producing large, softball-sized fruits with a smooth, glossy skin that ripens into deep purple and violet tones. The canopy forms a dense, rounded silhouette with long, leathery leaves—emerald green above and golden-bronze beneath—creating a shimmering, light-catching effect in warm wind. Inside, the fruit reveals a soft, milky custard pulp that is sweet, floral, and vanilla-rich, with a silky texture that melts on the tongue.

What sets ‘Hipolito’ apart from typical star apple selections is its combination of larger fruit size, deeper flavor complexity, and more consistent pulp density. While many star apples can be watery or mild, Hipolito is selected for its richer, creamier interior and stronger sweetness profile. The fruit also tends to hold better on the tree at peak ripeness, developing more aromatic depth before harvest. This makes it especially valued among collectors seeking a more refined, dessert-quality form of Chrysophyllum cainito.

Native to the tropical Americas, this species thrives in humid, lowland environments where it grows into a long-lived fruiting shade tree. Hipolito is both ornamental and productive, offering a striking canopy, wildlife value, and seasonal harvests of uniquely textured tropical fruit that stands out in both home orchards and food forest plantings.

Cultural & Culinary Significance

Star apple has long been cultivated across the Caribbean, Central America, and parts of northern South America, where it is enjoyed as a seasonal fresh fruit and home garden staple. The fruit is traditionally eaten chilled, halved, and scooped directly from the shell, revealing its signature star pattern at the core. In many regions, it is sold in local markets during peak season and associated with warm-climate home gardens and backyard orchards. Beyond fresh eating, it is occasionally used in juices and sweet beverages that highlight its soft floral sweetness. The tree itself is often planted for shade and fruit, forming part of traditional tropical homestead landscapes.

Why Grow Hipolito Star Apple?

  • Produces large, softball-sized tropical fruit with creamy custard flesh
  • Richer, more consistent flavor than typical star apple varieties
  • Beautiful evergreen canopy with golden-bronze leaf undersides
  • Long-lived shade tree with seasonal edible harvests
  • Strong ornamental and ecological value in tropical landscapes

Growing Tips

(Also known as: Star Apple, Cainito, Milky Fruit, Chrysophyllum cainito, Caimito)

Hipolito Star Apple thrives in full sun to partial shade and prefers warm, humid tropical conditions for best growth and fruiting. It performs best in rich, well-draining soil with regular organic matter additions. Consistent watering supports flowering and fruit development, especially during dry periods, though mature trees can tolerate short droughts once established. Avoid waterlogged conditions, which can stress root systems.

This tropical evergreen is sensitive to frost and grows best in USDA zones 9–11. Fertilize during active growth with a balanced fruit tree fertilizer to encourage canopy development and fruit set. Light pruning helps maintain airflow and shape but is generally minimal due to its naturally symmetrical growth habit. It can be grown in large containers when young, though full fruiting potential is best achieved in-ground.

Growth is moderate in warm climates, and trees may take several years to begin producing fruit. Harvest typically occurs in late summer through winter depending on climate, with fruit ready when slightly soft and aromatic.

These pills are a great buy considering the ingredients aside from the coloring. Has anyone else experienced weight gain?? I'm trying to figure out if it's these vitamins or the other vitamins I'm taking.

The transformative power of stories, not checklists
Format: Hardcover
As someone familiar with previous writings from Keller and Inazu, I was eager to get this book--it did not disappoint. Both gentlemen are serious scholars, so one might have expected a weighty or dense theological treatise. Instead, they oriented the project around stories--individual stories that faithfully reflect personal versions of the grand Story of redemption, hope, beauty, truth, and justice. Rather than offering long lists of direct recommendations to other people (whose contexts will inevitably be different), these stories target the soul. As such, these stories offer vivid and practical insights to my particular context, but they do so indirectly, authentically, and inspirationally. As Keller has written elsewhere, no one changes his behavior because he's told he needs to change--he must be SHOWN. This book doesn't just tell us what authentic Christianity looks like in our polarized world, it shows us--and it does so exceptionally well. Highly recommended if you want to challenge your soul with diverse renderings of faithful living. Direct application to your life and specific recommendations for action will no doubt emerge, but they'll come from the inspiration of the Holy Spirit working through the power of Story.
