The Santoku blade is inspired by a classic Japanese utility knife. Its scalloped edge helps prevent slices from sticking, and its broad surface is ideal for scooping and transferring ingredients. Made with 9Cr18MoV steel, the blade achieves a balance of corrosion resistance, toughness, and edge retention. Signature cut-outs reduce weight at the blade's widest part without affecting performance or comfort when pressure is applied to the spine. These cut-outs also provide leverage for easy thumb flicking to open the blade.
The knife features a light-colored beech wood handle, designed for durability and simplicity. The ergonomic shape ensures a comfortable and secure grip for various styles. It's scalloped at the balance point for a smooth transition to the blade. Flush-mounted fasteners eliminate bumps, and minimized holes prevent crud accumulation. The closed top handle enhances comfort and rigidity, while the blade's design allows full edge use and knuckle clearance. A liner-lock secures the blade when open.
