Warning: Any cooking process can kill the surface mould. Surface moulds SHOULD NOT be used in combination with fibrous casings as they will breakdown the casing (Collagen or Natural casings should be used instead.)
All MondoStart cultures are freeze dried and contain the appropriate amount of dextrose for optimal culture growth
