This pale straw-coloured Chardonnay from the Eden Valley highlights the best of variety & region. The nose has lovely grapefruit, white nectarine notes with complexity coming from the partial wild ferment, lees stirring & oak maturation. The palate is medium bodied with crisp acid & a creamy texture on the finish. Flavour highlights include grapefruit, apple, & white peach characters with an edge of minerality & some supporting oak in the background.

Grapes are night harvested, then destemmed & pressed immediately. Fermented in stainless steel tanks & a small portion of French oak barrels (new & old). The oak portion was fermented using wild yeast to increase the complexity & the tank portion was inoculated with chardonnay specific yeast to allow the fruit to express itself. 4 months on lees.
