Nase:
Eine klare, saubere Nase präsentiert einen Wein aus dem Isteiner Klotz, der zunächst viel mehr nach Cabernet Franc anmutet als Cabernet Sauvignon. Gekochte Paprika in allen Facetten. Grün, Rot, warm, kalt, gegrillt, gedämpft. Ein Hauch mediterrane Kräuter legt sich in Form von Thymian und Rosmarin um die Frucht. Rote Bete sorgt für eine erdige Süße. Er wirkt blutig und dunkel. Eine Mixtur aus Süßkirsche, Sauerkirsche, Brombeere und Pflaume bildet neben der dominanten schwarzen Johannisbeere die fruchtige Basis.

Gaumen:
Im Antrunk spiegelt er all dies auf sehr elegante Art und Weise wider. Er packt am Gaumen ordentlich zu. Kompakt, saftig und kernig. Die dunkle, satte Frucht trifft voll auf seien erdige Fruchtsüße. Herbe, bittere Akzente werden perfekt eingesetzt. Wohl dosiert und nicht störend. Seine herbe, vegetabile Seite wirkt enorm animierend. Ein Hauch von Pyrazin liegt im Raum, aber das steht ihm wunderbar. Die Frucht erfährt dadurch einen kontrastreichen Frischekick. Im Nachhall kommt die Frucht enorm säuerlich und rassig daher.

Der Cabernet Sauvignon steht auf 369 Höhenmetern in der Lage Isteiner Kirchberg. Diese Reben stehen auf jurassischen Kalkablagerungen zwischen dem Rheingraben und dem südlichen Schwarzwald.

Diese warme Region bietet dieser internationalen Rebsorte ein Zuhause, in der sie sich wohlfühlen kann. Die Bedingungen werden als nahezu mediterran betitelt. Der Ausbau erfolgt in französischen Eichenfässern, wovon 30% Neuholz darstellen.
